Danach sind die der Hay'schen Trennkost zugrunde liegenden Annahmen wissenschaftlich nicht begründbar, teilweise sogar seit langem von der Ernährungswissenschaft widerlegt. Dies betrifft in erster Linie die Forderung, protein- und kohlenhydratreiche Lebensmittel getrennt aufzunehmen, die aufgrund der physiologischen Verdauungsvorgänge falsch und sinnlos ist [7]. Der menschliche Organismus ist in der Lage, beide Nährstoffe gleichzeitig zu verdauen. Denn für die Resorption von Kohlenhydraten und Proteinen ist der Magen nicht primär zuständig.
