Gegenstand dieser Dissertation war eine komplexe materialwissenschaftliche Analyse von kommerziellen und Sortenhonigen durch chemische, rheologische und thermische Messmethoden. Die materialwissenschaftliche Kennwerte sind sowohl für die Bewertung der Qualität des Honigs als auch für das Verhalten in Grundoperationen der Verfahrenstechnik von großer Bedeutung, da daraus sich Fließ-, Transport-, Lager- und Verarbeitungsverhalten ableiten lassen. Weiter wurde in dieser Arbeit die Morphologie der Honigkristalle mittels Röntgenelektronenmikroskopie untersucht, um deren Einfluss auf die rheologischen und thermischen Eigenschaften der jeweiligen Sortenhonige zu erfassen. Diese Untersuchungen dienen als theoretische Basis für die Verbesserung der Verarbeitungsprozesse und der Qualitätskontrolle des Honigs. Aufgrund der bestimmten Stoffkennwerte kann man die Honigbearbeitung als Extremtechnologie einstufen.
